Spicy coconut sardine stew, rich and creamy with a kick of heat—flavorful and comforting.

Ingredients:
- 1 can TC BOY Sardines in Tomato Sauce
- 10–12 bird’s eye chillies
- 3 shallots
- 2 cloves of garlic
- 1 lemongrass stalk (bruised)
- 1 cup thick coconut milk
- ½ cup water
- 1 turmeric leaf (optional)
- 1 tsp turmeric powder (optional, for color)
- 1 tbsp cooking oil
- Salt and sugar to taste
Instructions:
- Prepare the spice paste:
Blend bird’s eye chillies, shallots, and garlic until smooth. - Heat oil in a pan, add the blended paste and lemongrass.
Cook until fragrant and slightly dry. - Add coconut milk:
Pour in coconut milk and water. Stir gently over medium heat to avoid curdling. - Add sardines:
Add the TC BOY Sardines in Tomato Sauce (including sauce).
Simmer for 5–7 minutes until the Flavors combine and gravy thickens slightly. - Season and serve:
Add salt and sugar to taste.
Garnish with turmeric leaf and serve hot with steamed white rice.
