Fluffy pancakes topped with caramelized grilled pineapple—sweet, juicy, and perfectly tropical.

Ingredients:
- 1 can TC Boy Pineapple slices in syrup(drained)
- 1 tbsp brown sugar
- 1 tbsp butter (for grilling)
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- A pinch of salt
- 1 egg
- ¾ cup milk
- 1 tbsp melted butter or oil
- Honey or maple syrup (for serving)
- Whipped cream or vanilla ice cream (optional)
Instructions:
- Grill the pineapple:
Heat butter in a pan over medium heat.
Sprinkle brown sugar evenly and place TC Boy Pineapple slices in syrup on top.
Grill each side for 1–2 minutes until caramelized and slightly golden. Set aside. - Prepare the pancake batter:
In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk egg, milk, and melted butter.
Combine both mixtures and stir until smooth. - Cook the pancakes:
Heat a non-stick pan and grease lightly with butter.
Pour a ladle of batter and cook until bubbles appear on top. Flip and cook until golden brown. - Assemble and serve:
Stack pancakes on a plate, top each layer with a grilled pineapple ring.
Drizzle with honey or maple syrup and finish with whipped cream or ice cream.
